Rapeseed Oil Producers' Recipe Ideas

You can't beat a classic English Toad in the Hole on a dreary Sunday afternoon. Which is why we spoke to leading rapeseed oil producers, Larchwood Foods, who let us know about a healthy twist on the British Classic - Toad in the Hole.

Ingredients:

  • 2 whole eggs
  • 2 egg whites
  • 200ml whole milk
  • 150g plain flour
  • 2 tbsp of rapeseed oil
  • 8 sausages
  • Salt & Pepper

Cooking Instructions:
To create the batter, place the milk, eggs and egg whites into a jug. Pop the flour into a separate bowl. Whisk the liquids into the flour until you have a smooth batter mix - move this aside for between half an hour and 2 hours.

Pour the rapeseed oil into a metal tin, along with the sausages to roast for roughly 10 minutes. Remove the tray, and whilst the rapeseed oil is still bubbling-hot, pour the batter mix into the tin. Place the tin into the oven for around 20 minutes, until golden brown.

Whilst the Toad in the Hole is cooking you can rustle up some fresh veg and gravy. Serve together on a pre-heated plate. Bon appetit!

Rapeseed Oil Suppliers - Mocktail Recipe

One of the UK's leading rapeseed oil suppliers had a fantastic year in 2011. Larchwood Foods recruited new staff, moved offices and launched their brand new range of rapeseed oil at the Speciality and Fine Food Fair back in September. The rapeseed oil suppliers aren't stopping there though. They told us that they'll be at the Birmingham NEC this year on March 25-27th for the Food and Drink Expo.

Rapeseed oil suppliers, Larchwood Foods, were also kind enough to provide us with one of their most simple yet interesting recipes - the Mocktail. With just Orange Juice, Grenadine and their own rapeseed oil, the Mockail is a brilliant healthy start to the day.
Ingredients:
  • 250ml Orange Juice (not from concentrate)
  • 20ml Grenadine (Optional)
  • 20ml Mr Hugh’s Extra Virgin Rapeseed Oil
Method:
  • Pour the oil into the orange juice (the oil should float to the top)
  • If being used, pour the grenadine into the mixture. This should sink to the bottom to give you a sunrise effect!
  • No need to stir.
